Ingredients
  

  • 1 lb ground Italian sausage mild
  • 1 medium shallot diced
  • 1/4 cup sun-dried tomatoes chopped
  • 1 tsp minced garlic
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 cup cherry tomatoes halved
  • 3/4 cup freshly grated Parmesan
  • 16 oz potato gnocchi
  • 1 cup baby spinach
  • Fresh parsley for garnish

Method
 

  1. Brown sausage in a pot over medium heat.
  2. Add shallot and sun-dried tomatoes; cook until softened.
  3. Stir in garlic, tomato paste, and seasonings.
  4. Add broth and cream; simmer gently.
  5. Stir in tomatoes and Parmesan.
  6. Add gnocchi and spinach; cook until tender.
  7. Garnish and serve warm.
