Ingredients
  

  • 39 Oreo cookies
  • 8 oz full-fat cream cheese room temperature
  • 1 tsp peppermint extract
  • tsp espresso powder
  • 8 oz semi-sweet chocolate chopped
  • 2 tsp coconut oil or canola oil

Method
 

  1. Pulse Oreos into fine crumbs.
  2. Blend with cream cheese, peppermint extract, and espresso powder until smooth.
  3. Roll into 1-inch balls and freeze for 1 hour.
  4. Melt chocolate with oil until smooth.
  5. Dip truffles, coat evenly, and return to tray.
  6. Refrigerate until set before serving.
